Note: This recipe makes about two dozen cookies, enough to feed plenty of
little elves on Christmas morning.
½ cup crunchy peanut butter
½ cup packed light brown sugar
1 egg, beaten
1.25 cups quick cooking oats
½ teaspoon baking soda
Instructions:
1. Preheat oven to 350 degrees
Fahrenheit.
2. Cream peanut butter and brown sugar
together in small bowl until fluffy. Add egg.
3. Add oats and baking soda. Mix well.
4. Drop tablespoons of batter about two
inches apart on a prepared cookie sheet. Bake for six to eight minutes.
